Fresh
Don't ever use frozen ingredients. Although this will limit you enormously, once you tasted fresh shrimps, tuna or squid ... Of course you can only find them in places close to where they are caught. Frozen meat, vegetables and fruit also lose a lot of taste.
Plates
Plates need to be round. Perhaps oval for a fish. But never square
